Lemon-balsamic Chickpea Spinach Salad

This flavorful salad is a great side dish or light vegetarian main dish. Fresh lemon juice and just a touch of balsamic dressing give it a great, light flavor.
Ingredients:
2 cups small cauliflower florets
1 can chickpeas, drained and rinsed (big can, little can - you decide...)
1 small zucchini, chopped
2 scallions, chopped
2 tbsp. sun-dried tomatoes, minced
2 tbsp. fresh basil, chopped
1 clove garlic, minced (or 2-3 cloves roasted garlic)
1 tsp, italian (or greek) seasoning
salt & pepper
1/4 tsp red pepper flakes
3 tbsp lemon juice
1 tbsp balsamic vinegar
1.4 cup olive oil
9 oz. baby spinach
1/2 cup feta cheese
Directions:
1. Combine cauliflower, chickpeas, zucchini and scallions in a large bowl.
2. In separate bowl, whisk together lemon juice, vinegar, olive oil, sundried tomatoes, basil and seasonings. Pour over vegetable mixture.
3. Toss with spinach and feta cheese before serving.
