Leftover-Pasta Frittata

Any leftover pasta may be used, with whatever sauce; but long pasta (like spaghetti or linguine) is traditional.
Ingredients:
8 ounces pasta
1 tablespoon olive oil
3 large eggs
1/4 cup parmesan cheese
1 salt and pepper
Directions:
1. Heat oil over low heat in medium saute pan.
2. Whisk eggs lightly with cheese and season to taste with salt and pepper.
3. Add pasta to pan, distribute evenly, and pour eggs over.
4. Cook over low heat until top is set; then invert skillet over larger plate and slide frittata back into pan to brown second side; this will be a shorter time, as most of the cooking has been done.
5. Dress with additional grated cheese and minced herbs, such as parsley, if desired.
