Left over Vegetable Soup

Another recipe I threw together, not expecting too much - but actually turned out to be quite tasty! This made enough for me to take to lunch and freeze some.
Ingredients:
8 cups water
3 carrots, diced
3 broccoli stems, diced (yes the stems)
4 stalks celery, diced
6 spring onions, chopped (including white and green parts)
1 tablespoon sage
1 tablespoon garlic salt (more to taste)
1 fennel, frawn
salt and pepper
Directions:
1. Bring 8 cups water to boil.
2. Add all ingredients, return to boil, reduce heat, simmer and let simmer uncovered for 30-40 minutes.
3. Season to taste.
