Lefse - Scandinavian Potato Cakes

These are a traditional potato cake of Scandinavia. Cook them on a dry griddle, no oil.
Ingredients:
4 cups mashed potatoes
2 cups flour
1/4 cup shortening
1 tablespoon salt
Directions:
1. Combine all ingredients and form into 2-inch balls.
2. Roll out like pie crusts and bake on a dry, no oil griddle like you do a pancake on medium heat for 2-3 minutes each.
3. You may wish to dust off any extra flour before cooking so they do not to burn.
