This is a recipe made by my good friend, Lee. It is an easy but very tasty recipe which is great over noodles with raw onion and cheddar or parmesan cheese on top. Even better the next day and it freezes well.
Ingredients:
1 tablespoon olive oil
1 teaspoon butter
1 large yellow onion, diced
2 garlic cloves, minced fine
1 lb ground beef
2 (15 ounce) cans tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (15 ounce) can kidney beans, drained
1 1/2 tablespoons chili powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Directions:
1. In a large pot, melt butter and add olive oil on medium heat.
2. Saute onions until soft then add garlic and stir for 1 minute.
3. Add ground beef to onion mixture and cook until brown.
4. Drain any fat off from the mixture once cooked.
5. Add tomato sauce, stewed tomatoes, beans and stir well.
6. Add chili powder, salt, pepper and stir well.
7. Increase heat and bring to a boil.
8. Once boiling, reduce heat to a simmer and cook 1/2 hour covered on stove.
9. Serve with raw onion and cheese over noodles for a twist to regular chili.
