Leek & Potato Soup Gi Jane

A traditional winter soup
Ingredients:
4 large leek, trimmed and chopped
16 oz potato, scrubbed and diced
3 oz green lentils
1 tablespoon olive oil
10 g butter
2 pints water
10 oz semi-skimmed milk
4 tablespoons parsley
2 chicken stock cube
Directions:
1. Heat a large saucepan and add the oil & butter together with the prepared vegetables. Put on the lid and allow the vegetables to steam gently for about 10 mins
2. Add the stock, bring to a boil and cook for approx. 20 minutes
3. Blend the soup using a hand-held blender
4. Add the lentils and cook for a further 20 minutes
5. Finally, add the milk, parsley, check the seasoning and serve
