Leek Celery Stew

An easy recipe combining the kind of metallic taste of the celery with the sweet taste of the leek.
Ingredients:
5 leeks cut in 2.5 cm slices.
1 small celery root cut in 4 pieces and in 2.5 cm slices.
1 celery stalk cut in 3 cm pieces.
1 big red onion chopped.
3 cloves garlic chopped.
1 c tomato chopped.
2 tbs tomato paste, dissolved in 1 c water.
juice of 1 lemon.
1 c olive oil.
1/4 ts ground nutmeg.
1 ts chili flakes.
salt and pepper to taste.
Directions:
1. In a big pan heat the olive oil over medium heat, add onion, garlic, celery root, celery and the leeks, stir saute till oil is gone, add tomato, tomato paste and another 1/2 c water and bring to a boil.
2. Add chili flakes, nutmeg and salt and pepper to taste, lower heat and cook pan covered for 40 min, take from heat and add lemon juice.
3. This is good either warm or cold.
