Made this for the first time today. It's a spin on a BH&G recipe. Less fat, just as yummy.
Ingredients:
8 hard boiled eggs, peeled & split lengthwise
6 leeks, cleaned & chopped lengthwise
2 tsp vegetable oil
3-4 tbsp butter
11/2 c 1% milk
3 tbsp all purpose flour
2c shredded white cheddar cheese
1/2 c parmesan cheese
salt & pepper to taste
Directions:
1. Place eggs yolk side up in 10 casserole dish
2. saute leeks on med to med low heat in oil until softened
3. Pat leeks with paper towel to reduce oil & place atop eggs
4. Melt butter to bubbling
5. Add flour & whisk until smooth
6. Add milk & blend thoroughly
7. Once milk heated, add cheeses to pan & blend until smooth
8. Pour hot cheese sauce on leeks
9. Place in 450* oven until cheese bubbly & starting to brown (about 10 mins)
