I used to make a tart with cheese and leek. It was similar recipe but more caloric. I think that casserole without a pastry and cheese still tastes great.
Ingredients:
4 large leeks, white parts only
4 eggs, large
500 g greek style yoghurt
salt, black pepper, sweet paprika or chili powder and marjoram leaves (spices are important because cooked leeks have sweet taste)
prosciutto or jamón serrano 4 oz (optional but very tasty)
Directions:
1. Chop the leeks and cook in little salted water till tender. Let cool and drain if necessary. Blend the yogurt, eggs and spices . Combine with the cooked leeks. Pour the mixture into a long pan (mine is 40×25 cm/16×9-inch). Bake for 30 minutes at 350 F/180 C. Serve warm . Reheat in a microwave.
