Good old Leek and Potato soup! So warming in this cold Irish Winter. Ingredients:
leeks |
onion |
garlic |
potatoes |
cream |
chicken stock |
Directions:
1. Peel the vegetables and dice them small 2. Add stock cubes, chicken juices (optional) and four pints of water. 3. Bring to the boil and simmer for approx 30 minutes 4. Leave to cool a little before blending 5. Season to taste with salt and freshly ground pepper 6. Add a dollop of cream before serving |
