Leek and Potato Soup

Ingredients:
2 tablespoons butter
4 medium leeks, rinsed and finely chopped
2 (14 ounce) cans chicken broth
1 (14 ounce) package frozen mashed potatoes
2 cups light cream
1/8 teaspoon nutmeg
1/4 teaspoon pepper
Directions:
1. In a large saucepan, melt butter. Add leeks, cover and cook over medium heat for 3 minutes.
2. Uncover, raise heat and cook, 3 minutes longer.
3. Add chicken broth, mashed potatoes, and 1 1/2 cups water. Cover and bring to a boil over high heat; reduce heat to medium and cook uncovered until potatoes are smooth, about 8 minutes.
4. Stir in cream, nutmeg and pepper. Cook over medium high until hot.
