Leek And Cauliflower Puff

Can be a nice appetizer to a main course or a nice snacks for tea.
Ingredients:
all-purpose flour on work surface
3 sheets store-bought puff pastry, thawed (i used borg’s puff pastry)
3 cups leeks jullienne
2 cups chop cauliflower
1 teaspoon fresh dill
1 teaspoon fresh marjorom leaves
sea salt and ground pepper, to taste
1 cup red cheddar shredded or break into small chunks
40 gms of unsalted butter
Directions:
1. Preheat oven to 375 degrees.
2. Prepare the filling: Fry the cauliflower in butter for 2 minutes, add leeks and fry till its soft. Add chopped majorom and dill and fry for another 5 to 7 mins. Turn off the heat and let cool. Add in shredded cheddar.
3. Prepare crust: On a lightly floured work surface, cut all 3 sheets of pastry into four.
4. Place the filling on one side of the pastry square and fold over and sealed all 4 corners with a fork.
5. Bake for about 10 - 15 mins till the crust of the pubb is golden brown.
