Lebanese Lentil Soup

A delicious slightly spicy soup, from Green Cuisine Cookbook, 2006
Ingredients:
2 tbsp olive oil
2 cups onions, diced
1 tbsp cumin powder
1/2 jalapeno pepper
4 1/2 cups water
1 cup carrots, diced
2 celery stalks, sliced
1 1/4 cup red lentils
1 tbsp lemon juice
1/2 garlic clove
1 tbsp salt
Directions:
1. Saute Onions, peppers and cumin in oil for 10 minutes.
2. Simmer the carrots and celery in the water for 20 minutes.
3. Add the cooked onion mixture and the lentils, and simmer for 35 minutes more.
4. Add the seasoning and serve.
