This meatloaf is low in saturated fat and sodium, without losing any flavor.
Ingredients:
2 lb beef, ground, 95% lean meat / 5% fat, patty
1/2 c rolled oats
2 oz garlic, minced
1/2 onion, diced
1/2 tsp cayenne
2 oz catsup
Directions:
1. Mince garlic.
2. Dice onion.
3. Combine first five ingredients and press into loaf pan.
4. Baste top of loaf with catsup and bake, covered in foil, 30 min 360.
5. Remove foil and broil 1 minute or until catsup bubbles.
6. Remove from oven, let stand 10 minutes before slicing into six generous portions
