Chicken tacos are a quick and easy meal idea for lunch or dinner. With just a few small tweaks, you can take this meal from kinda healthy to downright good for you. This recipe is an excellent source of fiber and a good source of Vitamin C and Vitamin A. Ingredients:
16 oz grilled boneless, skinless chicken breast
1/2 cup fresh chopped cilantro
1/2 cup of salsa
296 g (8 medium 6-inch, fajita) whole wheat tortillas
1 cup chopped tomato
1 cup chopped romaine lettuce
3/4 cup reduced fat cheddar cheese
1 (sliced or chopped) avocado
1/2 cup low-fat sour cream
Directions:
1. Sprinkle some of your favorite Mexican seasoning (Cumin, Adobe from Goya, Chili Powder, etc) onto the chicken breasts and then grill about 6-7 minutes a side.
2. Remove the chicken from the grill and allow it to cool. When chicken has cooled so it's warm to the touch, chop into bite size pieces.
3. Combine the chopped chicken breast with the cilantro and salsa in a medium bowl, tossing well to combine.
4. Place two spoonfuls on each whole wheat tortilla and top with tomato, cheese, avocado, lettuce, and sour cream.
