We LOVE our pickled jalapenos, sooooo... I tainted some cauliflower with the same juice and am in love. its zippy, spicy, vinagary, very yummy. I imagine the longer it set the more flavorful. Having not been blanched or processed i dont' know How long you could leave... safely. as with any pickle I'm sure the salt content is horrid, but darn near calorie free. i set the sitting in fridge time as cooking time. You pay ZERO attention after prep. but do have to plan and or wait for the yummy product. I'm sure you could throw other veggies in with good results too. i was thinking celery, carrot, and who knows.
Ingredients:
2 cups cauliflower
2 cups pickled juice, from vlasic hot jalapeno slices (vlasic is our favorite)
1 tablespoon jalapeno, from the jar for good measure (optional)
Directions:
1. 1. chop cauliflower into bite, or finger food size pieces.
2. 2. pack into clean glass jar.
3. 3. fill to cover with the pickled juice.
4. 4. let set in fridge for 2-3 or so days.
5. 5. enjoy.
