This is a great breakfast treat especially for those on the run! I have made these for church groups, club meetings, teachers breakfast, and for family and friends. People are always impressed with these! They are quick and can be modified with the ingredients of choice! Read more !
Ingredients:
2 cups cooked grits(cook grits according to package directions with one exception, use half milk in place of 1/2 the water, just lower heat when adding milk)
1 stick butter(1/2 to be used to scramble eggs in)
4 eggs, scrambled(fluffy: add 1/3 cup milk or half and half to eggs and whip scramble in frying pan with 1/2 of the butter)
salt and pepper to taste
1 cup or more shredded mild or medium cheddar cheese
1 cup of one or more of the following cooked meats (bacon(crispy), sausage, or ham)
12, 16, or 20 oz hot and cold type disposable cups
*a variety of options are available depending on flavors you want
Directions:
1. Cook grits by using package directions but substitute 1/2 the water for milk or cream. (this makes them softer and not so gritty)
2. Beat or whisk eggs with milk.
3. Season with salt and pepper and scramble(fluffy not dry) in butter
4. Stir remaining butter into hot grits and season with salt and pepper.
5. Divide grits evenly and place in 4 (12, 16, or 20 oz. cups)Hot and cold cups work best!
6. Spoon eggs evenly over each cup of grits
7. Top each cup with meat choice
8. Top with cheese
9. Keep warm until ready to serve or refrigerate and heat in microwave(if refrigerating, I have found that I needed to make grits thinner by adding more milk or water)
10. * You can add diced tomatoes and grilled onions and bell pepper to make Texmex cups or salsa and pepperjack cheese for Mexican cups, also green onions can be added. For a seafood version, saute shrimp or crawfish tails and green onions in butter, add a dash of Creole seasoning and you have a creole version! The possibilities are unlimited!
