It was really hot, my DH works on a golf course... we wanted something quick & easy & COOOOOOOOL as a said dish.. this is what I came up with!!!! He ate all of his, part of mine & asked for more... AMAZING!!! Last Night we were having a home made Italian Dinner & he requested that delicious asparagus salad you made up so, I figured if he (the veggie hater) liked it that well... I should share!!
Ingredients:
1 (15 ounce) can asparagus (tips, whole, fresh cooked, whatever's on hand)
1/4 cup ranch dressing (i used low fat hidden valley)
1 small tomato (diced)
2 teaspoons onions (diced)
2 teaspoons celery (diced)
2 teaspoons bell peppers (diced)
1/2 medium cucumber (diced)
4 tablespoons cheese (grated, any flavor, i had colby jack on hand)
1/4 cup crouton
Directions:
1. open & drain asparagus.
2. chop, slice, dice all fresh veggies (I did them small/diced because we like it that way, but it is any way u want it) add all veggies to mixing bowl.
3. add drained asparagus and ranch dressing.
4. mix until everything is covered with dressing (may have to add more per taste).
5. Top with cheese & croutons.
6. Chill.
7. SERVE/ENJOY.
