This is a beautiful salad if done in a glass bowl. Really nice and reasonably-priced dish to take to a pot luck.
Ingredients:
1 onion, chopped
2 cloves garlic, minced
1 lb. ground beef, scramble fried
1/4 cup taco seasoning
1 1/2 tsp chili powder
pinch of salt
2 tomatoes, chopped
1/2 head iceberg lettuce, shredded
3/4 cup cheddar cheese, grated
1 can kidney beans, drained
sliced green onion
avocado dressing
1 ripe avocado, peeled and pitted and mashed
1 green onion, thinly sliced
1/4 cup water
2 tbsp. fresh lime juice
2 tbsp. sour cream
1/4 tsp. salt
Directions:
1. Stir-fry onion, garlic, 1 lb (500 g) Ground Beef, add taco seasoning, chili powder and salt in large nonstick skillet over medium-high heat for 8 to 10 minutes or until beef is browned and completely cooked. Drain if necessary; set aside.
2. Layer tomatoes, chopped, in shallow 12 cup glass bowl. Follow with a layer of shredded lettuce, cooked ground beef mixture, cheddar cheese and kidney beans. Top with Avocado Dressing
3. Garnish with additional shredded cheddar cheese and sliced green onion.
4. AVOCADO DRESSING:
5. To mashed avocado, stir in green onion, water, lime juice, sour cream and salt.
