I received this in an email and tweaked it a little. It is tasty and just as good the next day. It's like a noodle less lasagna...sort of but not. :)
Ingredients:
4 potatoes, thinly sliced
1 jar pasta sauce i used neuman's pasta sauce.
2 sliced bell peppers
few olives, diced
mozzarella cheese, grated
9 oz mushrooms, sliced
parmesan cheese, grated
Directions:
1. Layer a deep covered casserole dish with potato, sauce, mushrooms, mozzarella
2. potato, sauce, peppers, mozzarella potato, sauce, mushrooms, mozzarella
3. potato, sauce, peppers, mozzarella potato, olives, parmesan. I put rings of the peppers on top of the final layer of potato.
4. Cover, bake at 300 F for 1 1/2 hours or until potato is soft. If it
5. seems dry and the potato is not soft add 1/2 a cup of water and cook for another 30 minutes.
6. I removed the cover from the dish and added the parmesan about 10 minutes before the dish was finished cooking.
