Lighten up this zesty, Mexican-inspired layered dip with low fat sour cream and low fat refried beans. If you can find a low fat cheese, all the better! Points:2
Ingredients:
1 (16 ounce) can low fat refried beans
1 cup chunky salsa
2 cups low-fat sour cream (or plain yogurt)
2 tablespoons taco seasoning
1 cup sliced olive (black or green)
1 cup shredded 2% mexican cheese blend
1 cup shredded lettuce
Directions:
1. In a bowl, combine beans with 1/3 cup salsa.
2. Spread half of mixture into a flat serving dish.
3. In a seperate bowl, blend taco seasoning into sour cream.
4. Spread 1 cup sour cream over the bean mixture, followed by 1/2 cup olives, 1/3 cup salsa, 1/2 cup cheese and 1/2 cup lettuce.
5. Repeat layering.
6. Cover and chill until ready to use.
