Layered Chunks Of Chocolate Squares

Wow !!! the chocolate is held by a vanilla crumb crust .. and lots of chocolate ...who could resist these cookie bars…..yummy……… Courtesy of chocolate- chocolate
Ingredients:
vanilla cookie layer
8- tablespoons ( 1 stick) unsalted butter, melted and cooled to tepid
1 2/3 cups vanilla wafer cookie crumbs ( such as crumbs from nabisco nilla wafers)..
batter..
1 1/4 - cups bleached all-purpose flour
1/4- cup unsweetened cocoa powder
1/4- teaspoon baking powder
1/4- teaspoon salt
1/2- pound ( 2 sticks) unsalted butter, melted and cooled to tepid
6- ounces unsweetened chocolate, melted and cooled to tepid
5- large eggs..
2- cups superfine sugar
2 1/2 - teaspoons vanilla extract
6- ounces bittersweet chocolate, coarsely chopped , for sprinkling on dark chocolate batter.
powdered sugar for sifting over the top of the squares
Directions:
1. Preheat oven to 325 degrees F.
2. Film the inside of a 10 x 10 x 2inch baking pan with non- stick cooking spray
3. Pour the melted butter into the prepared pan.
4. Spoon the cookie crumbs evenly over the bottom of the pan and press down lightly with the underside of a small metal spatula, so that the crumbs absorb the butter.
5. Bake the cookie layer in the preheated oven for 4 minutes.
6. Place the baking pan on a rack to cool for 10 minutes
7. Sift the flour, cocoa powder, baking powder, and salt onto a sheet of waxed paper
8. Whisk the melted butter and melted chocolate in a medium size mixing bowl until smooth.
9. Ina large mixing bowl, whisk the eggs for 1 minute to blend, add sugar and whisk for another 45 seconds to 1 minute or until incorporated…
10. Blend in the melted butter and chocolate mixture, mixing thoroughly..
11. Blend in vanilla extract..
12. Sift the flour mixture over and slowly stir ( or whisk) it in , mixing until the particles of flour are absorbed.
13. Stir in the 6 ounces of chopped chocolate
14. Spoon the batter in large dollops on the cookie crumb layer.
15. Carefully spread the batter over the cookie layer, using a flexible knife or spatula.
16. Scatter the 4 ounces of chopped chocolate on top of the batter………
17. Bake the bars in a preheated oven for 35 to 40 minutes , or until set
18. Let the bars stand in the pan on a cooling rack for 2 hours. , then refrigerate for 1 hour, or until firm enough to cut….
19. Cut bars into quarters then cut each square into 4 quarters
20. Remove squares from baking pan , store in airtight container if you don’t get them all eaten hahaha
21. Sift powdered sugar on squares before serving
22. Makes 16 squares ………
