This recipe won first prize in the first recipe contest sponsored by The Arizona Republic a number of years ago. Naturally I had to try it. Notice that there are no tortillas in this roll. This is a delightful appetizer and very popular, too. If you're lucky enough to have any left over they make terrific snacks the next day, too.
Ingredients:
8 slices deli ham, lunchmeat (1 package)
1 (3 ounce) package cream, cheese. softened
8 green onions, cleaned and trimmed in length to the length of the ham slices
Directions:
1. Spread cream cheese over slices of ham, going to the edges. (I count the number of slices ~ usually 8 ~ and divide the cheese into that many cubes. This makes it easier to have enough cheese of all slices) Place one green onion at the edge of each slice of ham. Roll each slice tightly around onion. Place in freezer about an hour to make slicing easier. Slice each roll into 1/4-inch slices. Actually I slice my rolls into 6 slices.
2. NOTE I: You may substitute for the onions: asparagus. pimiento strip. strips of red, green or other color bell peppers.
3. NOTE II: Suggested additions to the cream cheese: chopped canned green chilies, chopped black olives, celery seed, dill seed, or seasoned salt such as Mrs. Dash.
