This Italian soup is the perfect combonation of flavors. So inviting and filling. Add a loaf of crusty bread on dinner is done. So Good. Measurements for veggis are approximate - I just do what looks good.
Ingredients:
2 beef boullion cubes
1 lb bulk italian sausage
1 lb spicy bulk italian sausage (or use all spicey if you prefer)
2-3 carrots - chopped
2 stalks of celery - chopped
1/2 head of cabage - shredded
1 large onion - chopped
3 -5 cloves chopped garlic
1 large zucchini - chopped
1/2 buch italian parsley - chopped
4 oz can tomato sauce
1 can northern beans - drained and rinsed
1-1/4 cups uncooded ditalini (small tubed pasta)
Directions:
1. Fill a large stock pot about 1/2 way and bring to a boil. Don't over fill it 'cause there's a lot of stuff going in later.
2. Add the boullion cubes to the boiling water.
3. In a frypan cook the regular and hot Italian Sausage in a bit of olive oil.
4. Add cooked Sausage to the boiling Water.
5. Add carrots, celery, onions and garlic. Return pot to a slow boil.
6. Cook until veggies are al dente. (don't over cook because they'll be in there a bit longer)
7. Add zucchini, parsley and cabbage and tomato sauce
8. Simmer ~ 90 minutes
9. While simmering, cook the Ditalini in a separate pot
10. Add cooked Ditalini and Northern Beans and heat through.
11. Serve with crusty bread
