Yes, this is MY latke recipe. I am submitting one of MY many latke recipes to share with anyone and everyone on the internet. If you wish to copy any pics that I post, you may use them as well. I am not like some who are unwilling to SHARE. Read more . Or others who have nothing better to do with their time than to tattle tale like a child in kindergarten.
Ingredients:
5-6 medium - large sized potatoes, grated
note: i prefer yukon gold
2 onions, thinly sliced or grated
2 garlic cloves, minced
1-2 large eggs
1/4 to 1/2 cup all-purpose flour
1 tsp. baking powder
2 tbsp. fresh parsley, chopped
salt and pepper to taste
2-1/2 cups of vegetable or sunflower oil for frying
garnish with grated nutmeg if desired
Directions:
1. Using a box grater or food processor, grate peeled potatoes.
2. Place grated potatoes on several sheets of paper towel and press down to remove all moisture.
3. Thinly slice/grate onion.
4. Whisk eggs and add to onions, garlic and potatoes.
5. Stir in flour, baking powder, parsley, salt and pepper and blend evenly.
6. If you feel the mixture is too dry, add a tablespoon or 2 of milk.
7. Pour enough oil into a large deep frying pan to measure 1-1/2 to 2 inches and place over medium-high heat.
8. When the oil is hot enough, form potato mixture into pancake type shapes with hands.
9. Carefully place latkes into oil and cook for at least 5-6 minutes per side.
10. Do not over-crowd the frying pan.
11. When the latkes are cooked, remove from oil and place on a plate lined with paper towel or a cookie rack to drain.
12. Have either a separate plate or a cookie sheet handy to place latkes on and keep warm in a 325 degree oven until ready to serve.
13. Condiments are sour cream and applesauce.
