Awesome awesome awesome is all I can say. This recipe comes from my brother-in-law who is an awesome cook and is always springing surprises on us. This is a family favorite, hope it becomes one of yours as well.
Ingredients:
1 tablespoon olive oil plus more to grease pan
1 tablespoon chili powder
2 teaspoons finely chopped garlic
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1-1/2 pounds potatoes cut lengthwise into 1/2 thick wedges
1 medium white onion cut into 1/2 thick wedges
1-1/2 cups halved cherry tomatoes
1/3 cup coarsely chopped fresh cilantro leaves
1 tablespoon fresh lime juice
4 lime wedges
Directions:
1. Heat oven to 425.
2. On lightly oiled baking sheet combine 1 tablespoon oil, chili powder, garlic, salt and pepper.
3. Add potatoes and onion then toss to coat evenly and bake 25 minutes.
4. Add tomatoes and bake 10 minutes or until potatoes are tender.
5. Transfer vegetables to large bowl then add cilantro and sprinkle with lime juice.
6. Toss slightly then serve with lime wedges.
