This is the last banana bread recipe you'll ever try. I can't remember where I ever found this recipe, but I've had quite a few people tell me that this was the best banana bread they've ever had. Super moist with a good crispy crust (my favorite part!). Great with nuts thrown in. This couldn't be easier to make! Can also make 4 Mini-loaves, instead of 2 regular loaves. Couldn't tell you if it freezes well, because it's always gone too fast to make it to the freezer.
Ingredients:
2/3 cup oil
4 eggs
2 cups over-ripened bananas, mashed (about 4 large bananas)
2 cups flour
2 cups sugar
1 (3 1/2 ounce) box instant vanilla pudding
1 teaspoon salt
1 teaspoon baking soda
Directions:
1. Thoroughly grease two loaf pans. Preheat oven to 325 degrees.
2. Mix oil, eggs, and bananas.
3. Combine dry ingredients and add to banana mixture.
4. Pour into pans and place on a cookie sheet for spillover. Bake for about 1 hour.
