Last Minute Creamed Onions

Adapted from a great article in an old issue of Woman's Day featuring recipes served as part of family traditions during various holidays. I thought the story behind this particular recipe was very funny: Every year, the father's favorite Christmas side dish is creamed onions, but since they are so quick & easy to fix, somehow they always forgot to make them until dinner was just about ready to go on the table. Someone would quickly sneak into the kitchen and stir these up so their dad could have his holiday treat. I haven't made these yet, but had to share the recipe and the story. I think this sounds like a quick & easy recipe to make all winter long.
Ingredients:
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
2 teaspoons dijon mustard
1/4 teaspoon salt, to taste
1/8 teaspoon cayenne pepper, to taste
1 1/2 cups milk
3 (14 ounce) jars whole baby onions, rinsed and drained
1 scallion, sliced,for garnish
Directions:
1. Melt butter in a large saucepan.
2. Stir in flour and cook over medium-low heat, stirring constantly, until smooth and frothy.
3. Let bubble 2 minutes, sitrring often, to prevent browning.
4. Add mustard, salt and cayenne pepper, sitrring well.
5. Add milk, stirring, and bbring to a boil over medium heat.
6. Cook 2-3 minutes, stirring often, until thickened slightly.
7. Add onions and cook 1-2 minutes more, just to heat through, stirring.
8. Serve with scallion sprinled on top.
