Lassy Apple - Raisin Cake

This loaf cake is rich with the flavours of cinnamon, maple and molasses and studded with fruity bursts of apples and raisins. If you have time, soak the raisins in either apple juice or orange liqueur overnight for an incredible flavour experience! Read more !
Ingredients:
5 tbsp ground flaxseed meal
1/2 cup hot water
1/2 cup salted, cultured butter, softened
1/2 cup demerara sugar
1/4 cup maple syrup
2 tbsp fancy molasses
1/2 cup nonfat plain greek-style yogurt
1 tbsp cinnamon
1 tsp nutmeg
1 1/2 cups whole spelt flour
2 tbsp tapioca flour
1/2 cup rolled oats
1/2 tsp fine sea salt
1/2 tbsp baking powder
1/2 tsp baking soda
2 large apples, diced (peeled or not, i don't peel them)
1/2 cup raisins
Directions:
1. Preheat oven to 350F and grease a loaf pan.
2. In a small bowl, whisk together flaxseed meal and hot water. Set aside.
3. In a large bowl cream together butter and sugar until fluffy.
4. Add syrup, molasses, yogurt, cinnamon and nutmeg, beating well, then blend in the soaked flaxseed mixture until well mixed.
5. Whisk together flour, tapioca flour, oats, salt, baking powder and baking soda in another bowl.
6. Add to the butter mixture, stirring in by hand.
7. Add apples and raisins, folding in.
8. Bake 1 hour, tenting with foil after 40 minutes.
