Lasagna with Zucchini Noodles

A great way to use up extra zucchini, sneak vegetables in peoples diet, and reduce carb intake. You won't really notice the difference and if you do, it is a pleasant difference.
Ingredients:
3/4 lb beef
1/2 cup choopped onion
1 (15 ounce) can tomato sauce
1/2 teaspoon dried oregano
3/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon dried basil
4 medium zucchini
1 cup cottage cheese
1 egg, beaten
1/2 lb grated mozzarella cheese
parmesan cheese, grated
Directions:
1. Cook beef and onion until beef is browned, drain.
2. Add tomato sauce and seasonings.
3. Simmer, uncovered, 10 min.
4. ,stirring occasionally.
5. Slice zucchini in lengthwise strips slightly less than 1/4 inch thick.
6. Arrange half of strips in greased 13x9 baking dish.
7. Beat cottage cheese with egg; spread over zucchini.
8. Top with 1/2 the mozzarella and 1/2 the meat sauce.
9. Repeat layers of zucchini, mozzarella and sauce.
10. Sprinkle with Parmesan cheese.
11. Bake uncovered at 350 degrees for 40-45 minutes or until hot and bubbly.
12. Let stand for 10 minutes before serving.
