This is a pretty simple & quick lasagna recipe that doesn't suffer for the short cuts. OK, it's not in the same league with your Italian grandmother's slave-over-the-stove recipe, but it is darned good. It is adapted from the book that came with my 1st microwave.
Ingredients:
8 ounces lasagna noodles
2 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon leaf oregano
2 teaspoons basil
1/2 teaspoon salt
1 clove garlic, minced
1 lb ground beef, cooked & drained (or italian sausages, diced & browned)
2 cups small curd cottage cheese or 2 cups ricotta cheese
1 egg
2 tablespoons parsley, finely chopped
1/2 teaspoon salt
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
Directions:
1. Cook noodles (either microwave or boil, I usually boil) In a large bowl, mix together the ingredients for the sauce.
2. Spread 1/2 cup over the bottom of a 12 by 8 by 2 inch microwave safe dish.
3. Mix cooked,drained ground beef with remaining sauce.
4. In small bowl, mix together filling ingredients.
5. Layer 3 noodles, half of cottage cheese mixture, half of Mzzarella, half of tomato sauce in dish.
6. Repeat layers.
7. Sprinkle Parmesan over top.
8. Cover with waxed paper.
9. Microwave at High for 20 to 26 minutes, rotating dish1/4 turn every 8 minutes (if no turntable).
10. Let stand 10 minutes before cutting.
