This recipe has taken a few years to perfect. It is definitely a family favorite!
Ingredients:
1 1/2 lbs ground beef
1 lb italian sausage (i use hot)
2 -4 garlic cloves (depending on your taste)
28 ounces crushed tomatoes
2 (6 ounce) cans tomato paste
2 tablespoons dried parsley
2 tablespoons dried basil
1 tablespoon dried oregano
1 bay leaf
1 pinch thyme
1 pinch salt
1 teaspoon black pepper
1/2 cup onion (chopped fine)
1/4 celery (chopped fine)
1 1/2 cups chopped zucchini (optional)
1 1/2 cups chopped portabella mushrooms (optional)
2 cups cottage cheese
1 cup ricotta cheese
2 beaten eggs
1/2 cup asiago cheese or 1/2 cup parmigiano-reggiano cheese
2 tablespoons dried parsley flakes
1 pinch salt
10 ounces no-boil lasagna noodles
1 lb mozzarella cheese (sliced or shredded)
1/2 cup parmesan cheese
Directions:
1. Brown hamburger and sausage. Drain grease. Add onions and celery. Saute for a couple minutes. Add the rest of the sauce ingredients. Simmer for 45 minutes. While the sauce is simmering, mix together the cheese filling ingredients and set aside. Put a couple spoon fulls of sauce on the bottom of the pan. Lay 3 noodles crosswise on the bottom of the pan. Put 1/2 the cheese mixture on the noodles. Put half of the mozzarella cheese on top. Put 1/3 of the sauce mix on top of that. Repeat with the noodles, cheese, then sauce. Add a layer of noodles, then sauce. Top with the parmesan cheese. cover with foil and bake at 350ยบ for 30 minutes. Remove the foil and bake for an additional 15 minutes. You may add more mozzarella on top as well.
