LARGE BATCH EXCELLENT FRUIT CAKES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. Ingredients:
6 cups brown sugar |
4 cups butter |
12 eggs |
1 cup buttermilk |
1 cup honey |
2 teaspoons cinnamon |
2 teaspoons nutmeg |
1-1/2 teaspoons cloves |
8 cups flour |
2 teaspoons baking soda in a little hot water |
17 pounds fruit |
7 quarts pecans |
Directions:
1. Mix sugar, butter, eggs, buttermilk, honey, cinnamon, nutmeg, cloves and flour by hand. 2. Add fruit and pecans. 3. Spray 12 large loaf pans with nonstick cooking spray. 4. Fill pans 2/3 full then cook in pans filled half full of water to prevent over cooking. 5. Bake at 275 for one hour then allow to rest for 10 minutes then remove from pan and cool. |
