1-12--16 ounces uncooked wide egg noodles |
8 cups water |
1 1/2 to 2 pounds boneless skinless chicken breasts (or other parts) |
2 cups chopped onions |
8 oz. of fresh sliced mushrooms |
1 bell pepper (green or red), chopped |
1 1/2 cup chopped celery |
1 cup sliced carrots (optional) |
1 teaspoon salt (or to taste) |
1 teaspoon dried thyme leaves |
1 bay leaf |
1/2 teaspoon pepper |
2 cans (10 ounce) cream of chicken soup |
1 cup milk (may also use buttermilk) |
cook pasta according to package directions, omitting salt. drain |
set aside. |
meanwhile, bring water to a boil in dutch oven over high heat. add chicken breasts (or parts), onions, mushrooms,peppers, celery, carrots, salt, thyme, bay leaf and pepper. |
return to a boil. |
reduce heat to low; simmer, uncovered, 55 minutes. remove chicken. cut into 1/2-inch pieces; set aside. |
increase heat to high. return liquid in dutch oven to a boil. |
continue cooking until liquid and vegetables have reduced slightly. remove from heat; discard bay leaf. |
whisk in soup and milk until well-blended. |
add chicken pieces and pasta; toss to blend. |
may simmer 5 more minutes if needed. |
sprinkle with parsley, if desired. |
