This is my version of BenevolentEmperess original recipe..I serve this over basmati rice (my friends and family go nut's over this one)
Ingredients:
2 lbs lamb cut in to 1/2 in. cubes
4 tbsp olive oil
1/4 tsp ground turmeric
1/2 tsp ground cumin
1 tsp ground cinnamon
1/4 tsp ground cloves
1 tsp salt
1/2 tsp ground ginger
1 pinch saffron
3/4 tsp ground coriander
1/2 cup chopped cilantro
2 med onions diced in 1 in. cubes
4 carrots peeled and cut lengthwise then sliced on the bias in to 1/2 in pieces
1 cup diced dried apricots
5 cloves minced garlic
2 tbsp fresh grated ginger
1 lemon zested
15 oz. chicken broth
2 1/2 tbsp sun dried tomato tapenade
2 tbsp honey
cornstarch and water to thicken if needed
Directions:
1. Combine Lamb and the first 9 ingredients together in a large bowl mixing well
2. Cover and refrigerate 8 hours or over night
3. Heat a large pot to med heat and brown the Lamb
4. Add the remaining Ingredients except Cilantro and bring to a boil
5. Reduce heat to a simmer and cover stirring occasionally till Lamb is tender 2 hours give or take
6. Add Cilantro
