Lamb Sandwich

Although this uses uncooked lamb - with directions for roasting- I don't see why you couldn't use leftover lamb. Recipe Source: Women's Health
Ingredients:
3/4 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 lb boneless lamb
1/2 teaspoon olive oil
8 slices bread
4 teaspoons garlic spread
1 cup red onion, slivers
2 tomatoes, sliced thin
2 cups spinach
Directions:
1. Preheat oven to 400 degrees F.
2. Remove all visible fat from lamb.
3. Combine seasoning (black pepper - salt) in a small cup or bowl.
4. Rub lamb with oil then rub with the seasoning mixture.
5. Place lamb in a baking dish and roast for 30-40 minutes or until done (med rare).
6. Let lamb stand for 10 minutes before slicing.
7. Make 4 sandwiches with thinly sliced lamb and the remaining ingredients (bread - spinach).
