2-1/2 pounds lean lamb, cubed |
1/4 cup all-purpose flour |
3 tablespoons shortening (i do not use shortening and only use a drop or 2 of olive oil) |
1 onion, chopped |
2 garlic cloves, chopped or minced |
2 teaspoons salt |
4 tablespoons curry powder |
a pinch of saffron threads |
1 teaspoon granulated sugar |
1 cup water or vegetable broth |
note: i like to add a jar of my favourite curry sauce. it just adds to the authenticity. |
2 tablespoons lemon juice |
1 tart apple, peeled and diced |
2 tablespoons grated or flaked coconut (i omit due to allergies) |
2 tablespoons seedless raisins or dried currants |
a small amount of freshly grated nutmeg |
coriander chopped for garnish and cashew nuts. |
