Lamb Curry From East India

This is an absolutely delicious dish!!! I have prepared it many times over and everyone raves about it.
Ingredients:
2-1/2 pounds lean lamb, cubed
1/4 cup all-purpose flour
3 tablespoons shortening (i do not use shortening and only use a drop or 2 of olive oil)
1 onion, chopped
2 garlic cloves, chopped or minced
2 teaspoons salt
4 tablespoons curry powder
a pinch of saffron threads
1 teaspoon granulated sugar
1 cup water or vegetable broth
note: i like to add a jar of my favourite curry sauce. it just adds to the authenticity.
2 tablespoons lemon juice
1 tart apple, peeled and diced
2 tablespoons grated or flaked coconut (i omit due to allergies)
2 tablespoons seedless raisins or dried currants
a small amount of freshly grated nutmeg
coriander chopped for garnish and cashew nuts.
Directions:
1. Dredge meat in flour and brown on all sides in hot shortening.
2. Add onions and garlic to skillet.
3. Sauté a few minutes but do not brown.
4. Add remaining ingredients; mix well.
5. If you prefer a milder curry flavour then decrease the amount of curry powder.
6. Cover.
7. Simmer 60 minutes or until meat is tender.
8. Serve with basmati rice, naan and an assortment of condiments such as chutney and yogurt.
9. Note: I have also added cooked potato to this recipe and that too is very acceptable.
