From the Rapid City Journal I do half cake in brown sugar frosting and other half in cream cheese. Fun to make and to watch faces when they ask what kind of cake is that?
Ingredients:
lamb spice cake
1 pound ground lamb
1/2 cup oil
1 cup white sugar
1 cup brown sugar
2 eggs, beaten
2-1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup milk
1 cup raisins
1 cup walnuts, chopped
Directions:
1. In a large bowl, cream lamb, sugar and oil together. Add beaten eggs. In another bowl, sift together flour and dry ingredients. Mix flour and milk alternately into lamb mixture. Beat for 2 minutes. Add raisins and nuts and mix. Pour batter into 9-by-13-inch cake pan. Bake at 350 degrees for 30 to 45 minutes or until toothpick placed in center of cake comes out clean. Great with brown sugar frosting or cream cheese frosting.
