Lamb And Goat Cheese Wontons With Mint-cucumber Yo...

I used up some leftover roasted lamb as a filling (with goat cheese) for some baked wontons, and whipped up a mint-cucumber yogurt sauce for dipping. The lamb filling is already fully cooked and would also make a great faux pate' or spread. Read more . The yogurt mixture can be prepared a day ahead. Cooked ground lamb will also work for the filling.
Ingredients:
3/4 cup peeled, seeded and finely diced cucumber
1/4 cup chopped fresh mint
squeeze of lemon juice
1 clove garlic, minced
1 cup greek style yogurt (plain)
sea salt and pepper to taste
pinch of cumin (optional)
1 1/2 cups diced cooked lamb
2 tsp olive oil
1/4 cup chopped shallot
3 cloves garlic, chopped
1 tbsp chopped fresh rosemary
1 tsp. greek oregano
sea salt & pepper to taste
4 oz. goat cheese (semi-soft or soft)
about 20 wonton wrappers
Directions:
1. For sauce:
2. Combine cucumber, mint, lemon juice, garlic, yogurt, salt, pepper and cumin. (This can be made a day ahead) See Photo
3. Heat oil in small pan and saute shallots and garlic until tender, about 5 minutes. Add rosemary and heat 1 minute. Remove from heat.
4. Place lamb in food processor and pulse several times until finely minced. Add shallot/garlic mixture, oregano, salt and pepper and pulse until almost smooth. You can add a few drops of olive oil, but mixture should be somewhat dry. Add goat cheese and pulse a few more times to incorporate throughout.
5. For Wontons:
6. Preheat oven to 400 degrees F.
7. Cover baking sheet with parchment or foil and spray lightly with cooking spray. Keep wontons between layers of damp paper towels - remove one at a time and place a rounded teaspoonful of lamb mixture in center of wonton; moisten two edges with water and fold other edges over filling to form a triangle See Photo. Press edges together to seal, carefully pushing out any air pockets near filling. Place on baking sheet.
8. Repeat process until done. Spray lightly with cooking spray.
9. Bake for ten minutes or until edges start to turn golden brown.
10. Serve while warm with yogurt sauce.
