3 tablespoons olive oil
2 onions, diced
2 lbs lamb, cubed
3 tomatoes, diced
1 1/2 tablespoons tomato paste
2/3 cup white wine
1 (16 ounce) can artichoke hearts
2 tablespoons dill, fresh finelychopped
1 tablespoon parsley, finely chopped
1 lemon
Directions:
1. brown the lamb cubes aand onion in oil
2. add tomato paste
3. add tomatoes
4. add wine
5. add water to cover meat
6. simmer
7. covered for 1 hour
8. add artichoke s cook 30 minutes more
9. add herbs and lemon juice
10. cook 30 more minutes uuntil lamb is tender.
