Yum, yum! It sure smells good, and it tastes even better!
Ingredients:
1 cup brown sugar
1 1/4 teaspoons baking powder
1/4 teaspoon salt
2 dashes cinnamon
2 dashes nutmeg
1 dash powdered ginger
5 medium over ripe bananas
1 cup sour cream
2 tablespoons instant tapioca pudding mix
2/3 cup canola oil
1/8 cup melted butter
2 large eggs
1 cup bread flour
1/2 cup organic soy flour
1/2 cup whole wheat flour
1 tablespoon wheat gluten
Directions:
1. Preheat oven to 375°F.
2. Blend 1st 12 ingredients on high until smooth.
3. Add remaining ingredients and mix with a fork, leaving the batter slightly lumpy.
4. Pour into greased bundt pan, and place in preheated oven.
5. Bake at 375 F for 40 minutes, then reduce heat to 325 F and bake another 30 minutes.
