I had a lot of kumquats to use up so I thought how about kumquat cookies? I love chocolate and orange together and kumquats are even better because their rind bakes up like chewy candy! I hope you like them!
Ingredients:
1 cup kumquat, diced small
2/3 cup butter, at room temperature
2/3 cup dark brown sugar
2 eggs
1 1/2 cups oatmeal
2/3 cup chocolate chips
2 cups flour (i like whole wheat pastry flour)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
Directions:
1. Preheat oven to 375 degrees F.
2. Cream butter and sugar together in a large bowl.
3. Add eggs and vanilla and mix well.
4. In another bowl, mix together flour, baking soda, and salt.
5. Add flour mix, little by little, to butter mix until all is blended together.
6. Stir in the oats and the kumquats.
7. Stir in the chocolate chips.
8. Drop by large teaspoon onto an ungreased cookie sheet.
9. Bake for 10-12 minutes or until golden brown.
