Krinkly Kale Bacon Onions Garlic N Mushrooms

So many flavors in this dish. Can be made a day ahead so the flavors mingle. Shredding the kale allows you to cook it for a shorter period of time, so it retains an appealingly bright color and is gentler in flavor than if it had been slow-cooked.
Ingredients:
2 bunches kale ribs removed , shredded
black pepper or smoked apple bacon
1 large red onion sliced into thin circles
10 or more porcini mushrooms, sliced thinly
3 cloves sliced garlic
garlic bread
sweet cream btter or flavored dipping olive oil
Directions:
1. Have ready an ice bath for cooked kale
2. In a large pot boil salted water
3. add kale
4. cook until only tender (do not overcook)
5. put in ice bath to retain color
6. drain

8. meanwhile
9. in a hot skillet place bacon that has been cut into bite size pieces
10. as the bacon renders add
11. circular sliced red onion pieces
12. sliced garlic
13. sliced porcini mushrooms

15. place kale in a warmed bowl
16. add all other ingredients

19. Serve hot with slices of garlic bread right from the oven
