From our Electric magazine by Kristie Cox Salt River Electric. Makes 3 dozen.
Ingredients:
1 cup butter (2 sticks)
1 cup granulated sugar
1/2 cup brown sugar, packed
2 eggs
1 teaspoon vanilla
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
12 squares white baking chocolate, chopped
2 cups chopped pecans, toasted
2 cups dried cranberries
Directions:
1. Preheat oven to 374 degrees.
2. Beat butter and sugars in large bowl with elcetric mixer on medium speed until light and fluffy.
3. Blend in eggs and vanilla.
4. Add flour, baking soda, and salt.
5. Mix well.
6. Stir in chocolate, pecans, and cranberries.
7. Drop rounded tablespoonfuls of dough 1-1/2 apart onto ungreased baking ssheet.
8. Bake 10-12 minutes or until lightly browned.
9. Cool 3 minutes, remove to wire rack.
10. Cool completely.
11. Store tithtly in container.
12. Make 3 dozen.
13. Variation: Try white chocolate chips to make for a little easier preparation.
14. Cherry flavored Craisins also make for a different flavor.
