This is a Hunagrian sweet bread, my mother's family makes every holiday. I remember as a kid, we'd all get together and spend the day making these dense, nut-filled loaves. Aah...I can almost smell them now!
Ingredients:
dough
3 c flour
1/4 c sugar
1/2 teas salt
6 egg yolks
2 c golden raisins (soak raisins in warm water for 30 mins before adding to dough)
1 lemon grated w/juice
1/4 c butter
3/4 c milk
1 pkg yeast and 1 tsp sugar in 1/4 c warm water (let sit 10 mins)
filling
3 lbs ground walnuts
1 lb powered sugar
1 grated lemon w/juice
1 apple
6 egg whites
beat egg whites till stiff peaks form. fold in remaining ingredients.
*egg wash
Directions:
1. Scald milk and cool.
2. Cream butter, sugar, salt, egg yolk, lemon rind and juice.
3. Then add yeast milk mixture and flour and form into soft ball.
4. Place dough ball into a greased bowl and turn once so that greased side is up.
5. Cover and let rise for 2 hours till it doubles in size.
6. Roll dough into 10 x 10 squares.
7. Sprinkle raisins over the dough, and then press into it. (This helps keep the dough moist.)
8. Spread with nut filling and roll into loaf.
9. Gently brush the loaves with egg wash.
10. Bake at 375 degrees for 25-35 mins.
