Kohlrabi With Creamy Coleslaw Dressing

Kohrabi definitely is unique - with the look and texture of cabbage when chopped but with a slightly milder than horseradish taste. This salad tempers that slight spiciness with a very creamy dressing. It was a pleasant surprise to eat! Read more ! This one came from my CSA wh.
Ingredients:
1 pound of fresh kohlrabi, trimmed, peeled, grated or cut into strips
add any other crunchy veggie of your choice: broccoli, bok choy,radishes, carrots
fresh mint, chopped
dressing
1/4 c. cream
1 tbsp. fresh lemon juice
1/2 tbsp. mustard
pinch celery salt, to taste
1/2 tsp. sugar
salt & pepper to taste - go easy here
Directions:
1. Whisk cream into light pillows - this takes a minute or so, no need to get out a mixer. Stir in remaining dressing ingredients, the kohlrabi and other crunchy veggies. Serve immediately.
