Kohlrabi Patties

A new vegetable to my kitchen. I received one kohlrabi in my weekly CSA box and had to figure out what to do with it. Kohlrabi takes a bit too cook, so the technique of precooking the shredded kohrabi before making it into a patty is an important extra step.
Ingredients:
1 cup kohlrabi raw
1 egg
1 tbsp margarine
1 tbsp coconut flour
1 tbsp brown rice vinegar
1 tsp horseradish
1 tsp granulated baking splenda
1 tbsp olive oil
1 tsp real iodized salt
1/2 tsp pepper, white
Directions:
1. Retain the kohlrabi greens and shred about 1/2 cup of the greens. See Photo
2. Shred the kohlrabi and mix in the greens. Microwave these on high for about 90 seconds to soften. Remove and toss with the margarine and let cool a bit so you can handle it to make the patties.
3. Heat the olive oil in a skillet.
4. Mix the remaining ingredients to the microwaved kohlrabi, form into patties and brown in the skillet See Photo. Turn the patty after cooking 3-4 minutes on a side. See Photo
