Knob Creek Grilling Glaze

This sweet sauce is exceptional on grilled chicken or pork, with its bourbon-brown sugar-pineapple-garlicky flavors. It can also be used on oven-baked foods, basting frequently. I prefer to use smooth Knob Creek bourbon whiskey, but you can use Jack Daniels or whatever you like. Prep time includes roasting the garlic for this recipe. Yield is approximate.
Ingredients:
1/2 head roasted garlic (i use my own recipe for gooey soft baked garlic posted on this site; just be sure not to use raw gar)
2/3 cup water
1 cup pineapple juice
4 tablespoons worcestershire sauce
1 tablespoon soy sauce
1 1/3 cups brown sugar
3 tablespoons lemon juice
2 tablespoons minced onions
1 tablespoon bourbon (i use knob creek)
1/4 teaspoon cayenne pepper
Directions:
1. Combine water, pineapple juice, Worcestershire sauce, soy sauce, and brown sugar in a saucepan over medium heat.
2. Stir occasionally until mixture boils; then reduce heat and simmer.
3. Squeeze the 1/2 head of garlic into the mixture; discard skins and whisk garlic to combine (little chunks are okay).
4. Add lemon juice, onion, bourbon and cayenne pepper; simmer for about an hour or until sauce is syrupy and reduced.
5. Be sure not to boil over.
6. This is wonderful on grilled foods, but can also be used in the oven.
7. Baste food with sauce every ten minutes or so at the end of baking.
