Kiwi Style Eggs Benedict

This is a easy and very simple version made with good old tomato sauce
Ingredients:
2 slices brown bread
4 slices 97% fat-free shaved leg ham
2 eggs ( room temp)
40 ml tomato sauce
1 teaspoon white vinegar
Directions:
1. Bring a pot of water to the boil, add the vinegar. Swirl the water in a circle motion
2. Crack a egg into a small bowl then carefully drop into boiling water.
3. Once cooked to your liking remove the egg from the pot and cool in cold water.
4. Cook the 2nd egg and place in cold water.
5. Toast the bread and top with ham then tomato sauce.
6. Remove pot from the heat and place eggs back in water for 1 min.
7. Top toast with eggs and serve.
