Kiwi Fruit French Toast

Ingredients:
8 slices stale toasted bread
2 kiwi fruits, finely sliced
unsalted butter, softened
1 cup milk
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 teaspoon vegetable oil
white sugar
greek yogurt, to serve
Directions:

2. Preheat oven to 170°C.
3. Butter bread on one side and make sandwiches with kiwifruit.
4. Whisk up milk, egg, vanilla and cinnamon.
5. Heat oil and a knob of butter in a heavy-based frypan.
6. Dunk sandwiches in milk on both sides, to coat well, and fry until brown on both sides. T.
